SEATTLE, WA– Happy Thanksgiving to you and your loved ones! This is REALLY the official start of the season.  Despite holiday decorations and seasonal pumpkin flavored EVERYTHING starting near August these days, for me, this is the time of year when I start to get that “Holiday Vibe” really going.

And for me, when I think about the holiday’s I think food and you know my motto and if you’re new, you’re about to find out…

There’s no need to eat poorly on the road!

So in light of the first holiday of MY season, I thought we could look back at some of the meals I’ve made in the past on the road to give you some ideas and inspire to do something special.

For this, I’ll take you through a meal in multiple courses and give you links and examples of things you can do out on the road car camping or rving.  And, the nice thing about all of these meals… Yep… you can do them at home as well.

And the best part of me sharing all of this with you today… There’s still time to head to the grocery store and pick up some of these items to cook with, this week!

APPETIZERS

“Mixed Apps For Dinner!”

A couple of years back, I did a full episode on appetizers for dinner in my RV and let me tell you, these turned out to be fantastic!

“Meat–A-Palooza”

Another great appetizer option… how about a nice meat charcuterie board? I know it’s not for everyone, however if you’re down for some great grilling and some flavorful meats, try this to spice up your holiday!

MAIN COURSE

For your main course, usually at this time of the year, turkey is involved and I love a good bird. That being said, here are a couple of options for turkey-like meals and couple of other other options outside of the box!

“Wings & Things!”

If you can’t do a full turkey, how about a variation on the theme? Nothing like some great wings on the road right?

“Getting Corny with a Game Hen?”

One of my first full Thanksgiving’s on the road in my RV I wanted something that had the feel of Thanksgiving, without a huge turkey on the grill, so I pulled out the good old mini-turkey… the Cornish Game Hen!

“Outside the Box Option #1… Lasagna”

A good Lasagna is good ANYTIME of the year and it’s even better on the road! You want an amazing option for a celebration meal? Try this recipe.

“Outside the Box Option #2… Shrimp & Chorizo Paella”

Another nice option for the road and an easy 1 pan option. Shrimp & Chorizo Paella. I love this recipe because you really can incorporate lots of different proteins when you make it and it really doesn’t take long to do it!

“Outside the Box Option #3… Ribs anyone???”

Option number 3 when you’re thinking outside of the box are ribs. I mean, I love ribs and you can really eat them anytime of the year, so how about for say, “Thanksgiving?”

DESSERT

And when it’s all said and done, you really need a great dessert and I think this one fits the bill!

“Red Velvet Strawberry and Whipped Cream Waffles”

This dessert waffle is just fancy enough and delicious enough to top off your Thanksgiving meal for sure!
