You know my motto, “No reason to eat poorly on the road.” And over the years, I’ve had some real good fun cooking in and out of the RV.

In Season 2, we stepped it up with some Paella…

Then in Season 3, with YOUR help we created the “Jedeye Skillet”

And earlier this year in Season 4, my “Homage” to a very Brady Classic!

Now, I’ve created a fun dessert or breakfast that anyone can do on the road and dazzle your traveling partner/family with. A “Red Velvet Waffle!”  And this is how you do it!

“Red Velvet Waffle”

Ingredients: Flour, Hersey Chocolate, Baking Powder, Cinnamon, Salt, White Sugar, Brown Sugar, Buttermilk, Vanilla Extract, Whole Milk, One egg, Water, Strawberries, Bananas, Water, Red food coloring, Butter, Whipped cream and Carmel syrup.

First, let’s make the batter for the waffle: Half a cup of flour, quarter cup of Hersey’s Chocolate, Half a teaspoon of baking powder and cinnamon, pinch of salt, teaspoon of white sugar and brown sugar.

Next mix your wet ingredients: Egg, half a cup of buttermilk, two tablespoons of melted butter, one teaspoon of vanilla extract.

Mix the dry ingredients with the wet and at the end mix in a quarter cup of whole milk and 2-3 drops of red food coloring.

Now that the batter is ready, time to cut up your fruit. You want to chop up 4-5 strawberries for your berry reduction and then another 2-3 along with a banana that you’ll set aside to top your waffle with.

On the stove, combine butter, strawberries, about two tablespoons of brown sugar, one of white, a teaspoon of cinnamon and vanilla extract, along with a quarter cup of water, cook it down, then cover and let stand off the heat.

Pour your batter into your waffle iron and cook like a regular waffle.

Then pull out, add your cooked down strawberries, followed by the fresh fruit, Top with whipped cream and a Carmel drizzle.

Now comes the best part… time to eat! This is a great dessert or you could do it as a breakfast meal as well.  Bon Appetite!
