SILVER CREEK, WA – So excited to hit the road for 2025 and explore all over. And for me, RVing means “Cheffing-It-Up!” You know my motto, “There’s no need to eat poorly on the road!” This year I’m going to be busting out some amazing food and its starting right now.
This time out, we’re going a little old school with a sandwich, but a very unique bite, you may not have heard of before and that’s a, “Lasagna Sandwich.”

“LASAGNA SANDWICH”
THE RECIPE:
Ingredients – ground beef & sausage, olive oil, minced garlic, garlic powder, salt, pepper, butter, fresh oregano, dried oregano, onions, fresh thyme, dried thyme, Ricotta cheese, Mozzarella cheese, marinara sauce, heavy cream, parmesan cheese, dry basil, fresh basil, hoagie roll.

Simple this week, just chop up a quarter onion and 1 mushroom.
ON THE ROAD, READY TO COOK
Step 1 – Make your cheese spread, mixing two tablespoons of Ricotta cheese with a teaspoon of heavy cream and 1 teaspoons each of: fresh oregano, fresh basil, fresh thyme, salt, pepper, and garlic powder. Once you mix, set aside for later.
Step 2 – Next in a pan you want to drop in a tablespoon of butter and 2 teaspoons of garlic powder and toast a small hoagie roll. You’re looking for just a little bit of color on the bread.
Step 3 – Once the bread is toasted, in the pan you want to add in about a tablespoon of olive oil, heat that up and drop in your onions & mushroom and sweat it down. Then you want to add in a 50/50 split of ground beef and sausage, about a quarter cup each and start cooking down. As the meat cooks, add in a teaspoon each of: dried basil, dried oregano, dry thyme, salt & pepper and 2 teaspoons of minced garlic.
Step 4 – As the meat cooks all of the way through, you want to drop in a cup of your favorite marinara sauce (Or you can make your own) and let it reduce a bit.
Step 6 – After the sauce has reduced and is still hot, you want to add into the mixture about 3/4 of a cup of mozzarella cheese. You’ll mix it all together and then turn off the heat and cover.
Step 7 – Finally, it’s time to assemble the sandwich. You want to take your Ricotta cheese mixture and spread it on both sides of the bread. Then add in your lasagna sauce and finally top with some fresh basil.

And boom, there you have a great sandwich on the road in your RV or heck, you can do this one at home as well. No matter where you make it, it WILL be a great meal!
