RAVENSDALE, WA – I’ve done a lot of crazy things since I started car camping, but cooking outdoors in a hail storm was NOT on the list… but is now!
So on my latest trip out to Kanaskat-Palmer State Park, when I arrived the weather was nice. After my hike and as I start to cook dinner.. first it rained and then it hailed. The kind of hail that could take an eye out if you’re not careful.
Needless to say, I still had to put something in my belly after a long hike and since it was cold, I had the perfect meal for the night.
“Black Bean Soup” and not the kind you just pour out of a can, but the kind you can make from scratch and have an amazing meal!
“BLACK BEAN SOUP”

THE RECIPE:
Ingredients – 1 Can of Black Beans(Drained/Smushed), Mushroom, Onions, Carrots, Green Peppers, Roma Tomatoes, Jalapeños, Cilantro, Avocado, Minced Garlic, Shredded Cheddar Cheese, Sour Cream, Beef Broth, Bacon Grease, Lime
Spices – Salt, Pepper
Step 1 – At home before you hit the road, chop up 2 tablespoons of: onions, green peppers, and carrots along with half of a Roma tomato. Drop in a bag and hold until it’s time to cook
Step 2 – Time to cook, fire up your Jetboil MinMo or a small pan, add in a tablespoon of bacon grease, add your vegetables that you chopped and sweat them down. After about 2 minutes, or when the vegetables start to look translucent, add in a can of drained and smushed up black beans along with a tablespoon of minced garlic, cover and cook for another 3-5 minutes.
Step 3 – At the 5 minute mark, you want to add in a cup of beef broth and bring everything to a boil, then turn the heat down for the remainder of the cook to a medium heat.
Step 4 – After you’ve cooked your soup for about 7-10 minutes, add in a dash of salt and pepper, before adding in about 2 1/2 tablespoons of freshly chopped cilantro, the other half of your Roma tomato. You’ll also add in 2 tablespoons of sour cream, 2 1/2 tablespoons of shredded cheddar cheese and a quarter lime.
Continue to cook your soup for another 3-5 minutes before turning off your heat source and letting the soup sit for a good 2-3 minutes.
Step 5 – Finally, add in a half of an avocado chopped up, plate and eat! In this case, because of the weather, I’m eating my soup out of my Jetboil MiniMo.

A wonderful meal on a chilly night and even in the hail, dinner turned out delicious. This is a meal you can easily do on the road. Enjoy!
