BELGIUM, WI – First of all, Happy 4th of July! I hope you and your loved ones are doing something fun!

I’m always looking to create great meals on the road, because you know my motto, “No need to eat poorly on the road!”  So this time out at Harrington Beach State Park, I wanted to do something fun and easy in one pan.

|GREAT 4TH OF JULY RECIPES!

So this is a camping recipe coffee spice rubbed pork chop for dinner. Not a lot of steps at the campsite, because I did my prep at home before I hit the road and that is the key for a great meal like this!

THE RECIPE:

Ingredients – Bone in Pork Chop, Green Beans, Mushrooms, Potatoes, Butter, French Bread

Spices – Garlic cloves, Rosemary, Dark Coffee, Garlic Powder, Salt, Pepper, Oregano, Dried Basil, Paprika, Thyme

Step 1 – Heat up a cast iron skillet and add in a half a stick of butter.

Step 2 – The day before you want to make your dry rub and put it on your chop and let it sit overnight. In the dry rub you want: 1 tablespoon of good dark coffee, then a teaspoon of garlic powder, paprika, pepper, oregano and basil and a half a teaspoon of salt. You’ll mix this and then liberally put it all on your chop and into a ziplock bag overnight.  When you’re ready to cook, bring the chop to room temperature and place it in the skillet, searing it on each side for about 1 minute on each side.

Step 3 – Next in the pan you want to put in a mini branch of rosemary and two to three cloves of garlic roughly chopped up. Let them sit in the butter for about a minute, then bast the chop with the butter and garlic. After about a minute or so, flip and repeat the process. This will add flavor to your chop and keep it moist.

Step 4 – Once the meat is ready, you want to take it out of the pan and let it rest, then you want to add into the same pan with the rosemary, garlic and butter 1 small potato, cooked in a microwave for about two minutes. Then you want to cube it up and place it into the pan along with 3-4 mushrooms of your choice, sliced and 10-20 green beans cleaned and cut up. Add in a half a teaspoon of: salt, pepper, thyme, garlic powder, oregano and basil.  Mix with butter in the pan and cook for about 2 minutes, then you can turn off the fire and let everything continue to cook in the hot skillet.

Step 5 – Next up… plate up! Also in the hot pan after you’ve served up your vegetables, I use a little butter if need be and then I toast some bread for the final touch.

There you have it… Coffee Spiced rubbed pork chop with mixed vegetables all in one pan!  A meal made for a king and queen and in this case dedicated to Scott and his wife.

Scott follows me online and was at the park during this trip. He stopped by and we chatted for awhile and he told me he and his wife like my cooking segments, so this meal is for you guys!
