WAUPACA, WI – One of the nice things about RVing in cold weather is you get to eat hardy meals. At Hartman Creek, I did just that, so if YOU want to know how to make Dutch Oven Beef Stew… here’s my recipe and first time example using my Dutch Oven!

Ingredients – Beef Rump Roast, Potatoes, Onions, Green Peppers, Fresh Roma Tomatoes, Diced Tomatoes, Carrots, Sour Cream, Soy Sauce, Stone Arch Scottish Ale, Flour, Olive Oil
Spices – Garlic Powder, Salt, Pepper, Cayenne Pepper, Minced Garlic, Thyme, Paprika
First, you want to get all of your ingredients for the stew, chopped up into equal parts: 1 pound of Beef, two small potatoes, two Roma tomatoes, Half a Green Pepper, Half a large Onions, Quarter Cup of Baby Carrots.
Then in a bowl, mix a quarter cup of flour with a teaspoon of garlic powder, pepper and a half a teaspoon of salt, use to coat your beef.
In a separate bowl, mix together a tablespoon of garlic powder, with a teaspoon each of: cayenne pepper, thyme, paprika and black pepper.
Once the Dutch Oven is heating, place three tablespoons of olive oil into the pan, adding your onions and peppers to start cooking down.

In about 10 minutes you want to add in your beef, stirring and let it cook for about 10 minutes as well.
As your beef and onions/peppers are cooking, add in a tablespoon of minced garlic and your vegetables, your potatoes, tomatoes, carrots and your spice mixture, cover and let cook another 5 minutes.
Next into the oven, you want to add in your wet ingredients which include, 2 teaspoons of soy sauce, a half a can of diced tomatoes and one bottle of your favorite beer, in this case I’m using a great local brew, Stone Arch Scottish Ale. Stir and then let cook for about an hour to an hour and a half.

Now because this was my first time using my Dutch Oven, I let the coals cool down and could never really get the heat regulated and it was late, so I brought my stew into the RV, put it on the stove for about 20 minutes and then finished it off in a bowl with some sour cream.
It may have taken a little longer than expected, however it turned out amazing!
