I love Italian food and for this recipe we’re going to do one of my all time favorites on the grill. Cioppino is an Italian stew basically with lots of seafood in it. The nice part about this dish, is you can put whatever you like in it and it will still taste amazing!

So, let’s “Chef-It-Up!” And make this Cioppino happen!

Recipe:

Ingredients – Shrimp, Monk Fish, Clams, Red onions, Red bell pepper, Bacon, Minced garlic, 1 can of diced tomatoes, Butter, Red wine, Olive oil, Parmesan cheese, French bread

Spices – Basil, Oregano, Garlic powder, Thyme, Salt, Pepper, Red pepper flakes

First, make the time and chop everything up first. Then in a cast iron skillet that has been warming on the grill, add in two tablespoons of butter.

Next add in your chopped bacon, onions and bell pepper. Cook the bacon down and sweat the vegetables.  After you’ve done that, add in two teaspoons of minced garlic. Stir and let cook down a bit.

Once you’ve allowed the garlic to get happy with the rest of your mixture, add in your spice blend, which is a tablespoon each of: garlic powder, oregano, basil, and thyme, along with a half a tablespoon of salt, pepper and red pepper flakes.

Then add in your seafood, and cover with the liquid and shut your grill and cook for about 10-15 minutes making sure your clams open.

Once the Cioppino is complete, take it off the grill to cool down. Shut all of your vents on your grill and then take some French Bread, coat with olive oil, garlic powder and parmesan cheese, and place on the grill for just about a minute to get toasty.

Take your Cioppino out and into a bowl, get your garlic toast ready and go to town! Enjoy your special meal!
