Sometimes it’s just a little too hot to do a huge meal and sometimes you want just a little something-something for dinner that. Hits the spot. Now you know my motto, “There’s no need to eat poorly on the road,” and that’s the case tonight. We’re doing something light, flavorful and easy to make. Something I think will hit the spot for you and that’s a “Bacon Cucumber Salad”… oh and we’re going to make some homemade corn tortillas chips with Old Bay.

“BACON CUCUMBER SALAD”
THE RECIPE:
Ingredients – Thick cut bacon, English cucumber, red onion, cherry tomatoes, minced garlic, dill, basil, thyme, salt, pepper, sour cream, parmesan cheese, Old Bay, canola oil.
“MISE EN PLACE” ON THE ROAD
- Chop a half of an English cucumber
- Chop one slice of thick cut bacon, cooked and chilled
- Chop up 2 stems of thyme, about 7 basil leafs and 3 stems of dill
- Chop 1 large red onion slice
- Slice 3 corn tortillas into triangles

READY TO COOK:
Step 1 – Take your chopped up cucumber, onion and bacon, place them in a bowl and mix them up. Then add in about 7-8 cherry tomatoes.
Step 2 – Once everything is mixed, add in your herbs and a 1/2 teaspoon of salt & pepper along with a teaspoon and half of minced garlic
Step 3 – Next into the bowl you want to add 3-4 tablespoons of sour cream along with 2 large tablespoons of parmesan cheese. Mix all together and store in the fridge.
Step 4 – Into a small pan, add in about a 1/4 cup of canola oil, bring up to temperature and then drop your tortillas chips in, not crowding them and cook them in small batches until golden brown. Once the chips are cooked, pull them out of the pan and place them into a bowl and dust them with Old Bay seasoning.
Step 5 – Once your chips are all ready, pull your salad out, plate up everything, including some salsa and have a great meal!
