The time has come for the first “Cheffing-It-Up!” Segment in my “New-2-Me-RV,” my 2019 Winnebago Travato 59gl.  If you’ve followed me before or your new here, I have a simple motto about food when out and about… “There’s no need to eat poorly on the road!”  So with that, we’re kicking things off this year with a fun little recipe, “Pancetta & Gnocchi in a Herb Sauce”

“PANCETTA & GNOCCHI IN A HERB SAUCE”

THE RECIPE:

Ingredients – pancetta, gnocchi, mushrooms, cherry tomatoes, onions, garlic, butter, cream, fresh basil-thyme-dill, dried basil, oregano, salt, pepper, olive oil, dried parmesan cheese

“MISE EN PLACE” ON THE ROAD

  • Chop a 2 tablespoons of fresh basil
  • 2 stems of thyme and dill
  • Chop 1 large onion slice
  • Chop up 4 large mushrooms
  • Chop 2 garlic cloves

READY TO COOK

Step 1 – Bring a medium sized pot of salted water to boil, drop in about a cup of gnocchi and let them boil until the float 

Step 2 – At the same time to a pan, add in 1 tablespoon of olive oil… heat up and then add in a cup of chopped pancetta and sweat down.

Step 3 – Once the pancetta starts to render off some fat, you want to add in your onions, garlic and 7-10 cherry tomatoes and your mushrooms and stir.  This is also the time to add in a half a teaspoon each of salt pepper.

Step 4 – To your pan, you now want to add in your fresh herbs and then a teaspoon each of dried: basil and oregano and mix.

Step 5 – Next into your pan, you want to add in a tablespoon of butter and about 3 tablespoons of white wine and start to stir and incorporate everything together.

Step 6 – After cooking everything just a minute or so, you want to add all of your gnocchi into the pan, also bringing in about 2 tablespoons of the pasta water. Make sure to stir

Step 7 – Finally to the pan you want to add in about a half a cup of dried parmesan cheese.  Turn your heat off and mix and let it stand for a couple of minutes before plating and diving in for dinner!
