GRAYS HARBOR COUNTY, WA – Sometimes let’s face it, you just want to throw something in the crockpot, set it and forget it until it’s time to eat.  Just because you’re doing a crockpot dinner, doesn’t mean you can’t “Chef-It-Up!”

So with that in mind, here is a fun and easy meal to do, on the road in your RV.

“RVJEDEYE TEXAS CHILI”

THE RECIPE:

Ingredients – 1 pound of petite sirloin steak, yellow onion, Roma tomatoes, garlic powder, salt, pepper, paprika, chili powder, cumin, flour, 1 can of diced tomato, minced garlic, olive oil, red peppers, jalapeños, tomato paste, hot sauce, ketchup, shredded cheddar cheese and sour cream.

“MISE EN PLACE”

All of this done before hitting the road: chop 1 onion slice along with two slices of red pepper and two Roma tomatoes.  In addition to that, cube up your steak and put all of the “mise en place” in containers and keep in the cooler/refrigerator until it’s time to cook.

ON THE ROAD, READY TO COOK

Step 1 – In a pan, add a tablespoon of olive oil, heat up and then add in your beef along with a teaspoon each of: garlic powder, cumin, chili powder, paprika and salt & pepper.  Once the meat has started to brown, you want to add in bout 2 tablespoons of flour, stir to coat and then turn off the heat.

Step 2 – Next, you want to drop your meat into the crockpot along with your chopped onions, red peppers and a half of a jalapeño also chopped as well.  Also into the crockpot at this time: 1 can of diced tomato, 1 tablespoon of minced garlic, 2 teaspoons of hot sauce, your choice, along with 2 teaspoons of tomato paste and 2 teaspoons of ketchup. 

Step 3 – Once everything is in the pot, you want to stir it and then add in 2 teaspoons each of: garlic powder, salt & pepper, cumin, paprika and chili powder. Mix it all up one more time, cover and cook on high for 2 1/2 hours.  You’ll want to cook everything for about 4-4.5 hours.

Step 4 –  After four hours if there chili is loose, you want to add in a slurry of 1.5 tablespoons of flour to 2.5 tablespoons for water, mix and add into the chili, stirring it in and then cooking another 10-15 minutes.

Step 6 – Once the chili has thickened, you want to plate up. I like to add some more chopped onions and shredded cheddar cheese and sour cream.

Having all day to cook a chili is great and using this Elite Gourmet crockpot was the perfect way to cook a perfect meal!
