ELMA, WA –  I’ll say it again and again and again…“There is NO need to eat poorly on the road!” That’s my motto, I live by it when it comes to RVing and tonight, we’re going to “Chef-It-Up” in a really fun way with something I think you may want to try.

Now, for this recipe you will have to use a microwave, so hopefully in your RV, you’ve got something to work with.  I don’t do a lot of desserts, but I think every now and then you need one so here is my entry.

“CHOCOLATE STRAWBERRY MICROWAVE CAKE”

THE RECIPE:

Ingredients – Flour, Sugar, Baking Powder, Vanilla, Butter, Milk, Shredded Coconut, Jimmies, Hersey Chocolate Sauce, Coco Powder, Strawberries, Whipped Cream, Water

ON THE ROAD, READY TO COOK

Step 1 – We need to make the strawberry sauce that will go on top of the cake in the end. Start off by melting a Tsp of butter, along with 3 chopped strawberries, 1 Tsp of sugar and about 3 Tbsp of water and cook down until the strawberries are soft and mushy.

Step 2 – With the strawberries starting to form a sauce, add in 3-4 strawberries sliced. Mix all together and cook for about another 2 minutes and then pull off of the stove, place into a bowl and chill immediately for about 15-20 minutes.

Step 3 – First in a microwavable bowl, melt 2 Tbsp of butter, then to the butter add in 2 Tsp of vanilla and mix. 

Step 4 – Next into the bowl add in 4 Tbsp of coco powder and mix with a fork to bloom the chocolate

Step 5 – Once everything is mixed well, add in 3 Tbsp of sugar and mix.

Step 6 – After the sugar is mixed in, you want to add in 4 Tbsp of room temperature milk and mix again.

Step 7 – Right after that you want to add in 4 Tbsp of flour, a half a Tsp of baking powder, 1-Tbsp of shredded coconut and 1-Tsp of chocolate “Jimmies” and mix thoroughly.

Step 8 – Time to microwave your cake batter. You want to cook it for exactly 1 minute and 30 seconds.  As soon as it’s done and you pull it out of the microwave, you want to drizzle Hershey’s chocolate sauce all around the top of the cake and then set aside to cool, about 10-15 minutes.

Step 9 – Once the cake has cooled, you want to put your strawberry mixture on top and then finish with whipped cream before diving in to eat!

This may be one of my favorite things I’ve cooked in my RV in a long time. It’s perfect to wrap up a good meal and to finish off your day!
