REDMOND, WA – I have a simple motto when it comes to eating while I’m RVing and that is, “There is NO need to eat poorly on the road!”
I mean you’re out and about having a great time, why should you ever shortchange yourself when you’re RVing?
So keeping that in mind during my stop at McMurtrey Christmas Tree Farm, during my first ever “Hip Camp” stay, I wanted to do something fun and unique and it was perfect! This is a meal I think you can do any time you want on the road and at home!
“SHAKSHUKA”

INGREDIENTS:
Bacon, Chorizo, chopped onions, chopped red peppers, 1 can of diced tomatoes, garlic, lemon, olive oil, butter, French bread, 2 eggs, Feta cheese
Spices – garlic powder, salt, pepper, cumin, dried oregano, paprika, cayenne pepper
“MISE EN PLACE” BEFORE HITTING THE ROAD
Step 1 – Chop 1/4 cup of onions and red peppers.
ON THE ROAD, READY TO COOK
Step 1 – First heat up a skillet and cook two slices of bacon. Once cooked remove the bacon, leave the bacon fat and add in a teaspoon of olive oil.
Step 2 – Into the skillet, you want to put in your chopped onions and peppers and start to sweat them down.
Step 3 – Next into the pan, you’ll want to add in three tablespoons of Chorizo, a cup of diced tomatoes and then a teaspoon each of: minced garlic, oregano, cumin, cayenne pepper, paprika and a half a teaspoon of: garlic powder, salt and pepper.
Step 4 – Once your mixture has cooked down for 2-3 minutes, you want to form a well in the skillet and add in two eggs. To the top of the eggs add in as much Feta cheese as you like, probably two tablespoons. Cover and let cook until the eggs are done.
Step 5 – Toast up some bread and plate it all up with the bacon and a good cup of coffee.

I love this meal at home or on the road.It’s easy to do and very tasty. I think you’ll really like it!
