DES MOINES, WA – Coming up with unique car camping meal ideas is always fun. I spend a lot of time, thinking carefully about what I’m going to “Chef-It-Up” with on the road.

My motto is simple when it comes to food, “There’s no need to eat poorly on the road.”

So tonight, using my Jetboil MiniMo stove and skillet, I’m going to show you how to do a one pan dinner to knock your socks off! Anyone up for some chicken fajitas?

“JETBOIL CHICKEN FAJITAS DINNER”

THE RECIPE:

Ingredients – chicken strips, red & green bell pepper, onions, Roma tomatoes, avocado, lime, olive oil, canola oil, sour cream, flour tortilla

Spices – salt, pepper, garlic powder, onion powder, minced garlic, chili powder, cumin, cayenne powder 

“MISE EN PLACE” BEFORE HITTING THE ROAD

Step 1 – Building out the fajitas marinade. Mix: 2 tablespoons for olive oil and a tablespoon of lime juice along with a teaspoon each of chili powder, onion powder, garlic powder and a half a teaspoon each of salt and pepper. Take the mixtures and pour is over your chicken strips and let it marinate together at least 24 hours ahead of time.

Step 2 – Also at home mash up a half of an avocado, add in a teaspoon each of garlic powder, minced garlic, salt, pepper and lemon juice, mix all together and use to finish off your fajitas.

ON THE ROAD, READY TO COOK

Step 3 – When you’re ready to start cooking, heat up your pan with about two teaspoons of canola oil. Get your pan hot before dropping your chicken and starting to brown. It should take around 3-4 minutes, you want to make sure your chicken is cooked all of the way through.

Step 4 – Once the chicken is cooked, remove it and in the same pan add in your peppers and onions and cook down until soft.  I did add a teaspoon of: paprika, garlic powder, cayenne powder and a half of a teaspoon of salt and pepper and minced garlic.

Step 5 – When your veggies are done, pull them and combine with the chicken. Using the same pan, warm up two tortillas

Step 6 – To plate, add your fajitas mixture to your tortillas along with some of your homemade guacamole and sour cream… and dig in!

Another wonderful, fun and easy meal to do on the road! I like something simple on the first night of a camp and this is a great example of how you can do something with tons of flavor and not a lot of extra work!
