BRINNON, WA – You want a perfect meal on the road for car camping?  I think I may have something for you with this one. It’s easy, depending on where you’re at you usually can get some great protein and it won’t take you a long time to put it all together.

So if that all sounds good to you, let me show you my recipe for:

“SEARED SCALLOPS & CHEESY POLENTA”

THE RECIPE:

Ingredients – Large Scallops, Onions, Mushrooms, Minced Garlic, Polenta, Fresh Basil, Fresh Rosemary, Chicken Stock, Heavy Cream, Italian Mix Cheese, Dried Parmesan Cheese, Butter, Olive Oil

Spices – Garlic powder, Salt, Pepper 

Step 1 – Start by boiling a cup and a half of chicken stock, once it’s rolling, add in 2 cups of polenta and stir.

Step 2 – About 5-10 minutes in, your polenta will start to thicken. That’s when you want to add in a half a cup of heavy cream, continue to stir.  Also at this time, start heating up your skillet.

Step 3 – A couple of minutes after adding your cream, add in a cup of your mixed Italian cheese and 2-4 tablespoons of dried parmesan cheese. Pour in a quarter cup of cream, stir everything, cover and turn off the heat.  At the same time, take your scallops, pat them dry and salt, pepper and garlic powder each side of each scallop.

Step 4 – To your skillet, add in 2 tablespoons of olive oil and butter.  Once everything has melted and the pan is screaming hot, place in your scallops, searing for about 2-3 minutes on each side.

Step 5 – Once your scallops are done, remove them from the skillet, then add in a quarter cup of onions and mushrooms, along with 2-3 tablespoons of basil and 2 tablespoons of fresh rosemary. Turn your skillet off and still to cook down. As the vegetables sweat down and get translucent, fold them into polenta.

Step 6 – Time to put everything together, plate up the polenta first, scallops on top and then finish with some freshly chopped basil.

There you have it, seared scallops with cheesy polenta. I had some garlic bread on the side and some Lindeman’s Pinot Grigio which was perfect for this meal, chilled, crisp and delicious.
