CARNATION, WA – On the road, you have to take care of yourself. It’s not just enough to get out there and explore, you really want to have fun explore and eat well And when it comes to eating, I have one major motto!
So today, here is a great example of how you can, “Chef-It-Up” on the road with an easy, fun to make meal…
“ARGENTINIAN SURF & TURF“
Ingredients – Argentinian Shrimp, Petite Sirloin Steak, Cauliflower and Broccoli. Bacon fat, butter, Ciabatta bread
Spices – Garlic powder, Salt, Pepper, Cumin, Paprika, Thyme, rosemary
Step 1 – Build your dry rub: A teaspoon each of garlic powder, paprika, thyme and then a half a teaspoon each of salt, pepper and cumin. Mix together and then mix with the shrimp and rub it on the steak and hour to 24 hours in advance of cooking.
Step 2 – Next, fire up your stove and heat up your cast iron skillet. Once it’s just about smoking, you want to add in a tablespoon of bacon fat and melt it down.
Step 3 – Once the pan is hot, you want to drop your steak on for one to two minutes on one side, then add in about a teaspoon or two of butter and a sprig of rosemary… I grow my own and then cook another one to two minutes basting the steak until it’s ready to pull out of the pan
Step 4 – In the same pan, drop your shrimp, but stay near them they will cook very quickly and you don’t want to overcook them, again, maybe one to two minutes on each side. You’re looking for a slightly red cooked through look on your shrimp.
Step 5 – Right after you pull your shrimp, you want to get your cauliflower and broccoli into the pan, mix them around to get all of the other juices from the steak and shrimp. Salt & pepper lightly and your veggies will also cook quickly one to two minutes as well.
Step 6 – Finally, add a teaspoon of butter, turn off the stove and in the pan toast off some Ciabatta bread.
