BROWN COUNTY, WI – How to Grill a Mean Steak RVing? It’s a question I get a lot when I am Cheffing-It Up! To me it starts with a great cut of steak and for me that’s the Ribeye, then it’s keeping in simple and letting your grill do the work. Although every now and then, like tonight, we’re going to put a little spin on the steak that YOU can do easily on the road and I think you’ll enjoy!

Ingredients – Ribeye Steak, Onion, Mushrooms, Idaho Potato, Asparagus, Bacon, Olive Oil, bacon fat, Ken’s Steakhouse Dressing – Buttermilk Ranch, Sour cream
Spices – Garlic Powder, Salt, Pepper, Hot Old Bay
Let’s start by using one strip of bacon and wrap it around 4 stalks of asparagus, after you’ve cut off the ends.
Next, wash off your potato, take a fork to it, poking holes all around it. Then coat with olive oil and liberally sprinkle Hot Old Bay over it and then get it onto the grill, because it will take the longest to cook.
This next step you can actually do a couple of hours before, take 2 teaspoon of garlic powder, add to it a tablespoon of salt and pepper and mix. Rub down both sides of your steak with olive oil then massage in your spice mixture, leaving a little out to do the same with the mushrooms. (Coating them with olive oil and the spice mixture)

Again, you can do this earlier in the day and let the meat rest, however if you don’t want to do it then, give it at least 20-30 minutes before you take your steak and put it on the grill. At the same time you want to drop on your bacon wrapped asparagus as well.
Once one side of your steak is grilled, flipped it and also add the mushrooms and raw onion to the grill. Place your cast iron skillet onto the grill as well with a teaspoon of bacon fat.
If your fire is hot enough, your steak will go quick. You want to take it off and let it rest. Turn your asparagus to make sure your bacon is cooking all of the way through. Also make sure you’r turning your potato, which should have been on the longest, half hour or so.
When the bacon is nice and crisp around the asparagus and your potato is cooked through, remove from the heat.
Take your mushrooms and onions and drop them into the cast iron skillet and take them inside to your stove. You are NOT turning on the stove however. Once inside, add in 1/4 cup of Ken’s Steakhouse Dressing-Buttermilk Ranch into the pan, along with two tablespoons of sour cream. Stir until your sauce comes together.
