Cheffing it Up: College Football & Chili Dogs!

Fall for me is NOT about Pumpkin spiced beverages, it’s all about great college football and some fun meals, like today’s! Could I interest you in some loaded chili dogs with your college football? 

Oh what the heck, you don’t even have to watch football to enjoy these treats!

Recipe:

Ingredients – Hot Dogs, Chorizo, Ground Beef, Green & White Onions, Green Peppers, Sour Cream, Mustard, Ketchup, Sauerkraut, Jalapeños, Tomatoes, Pickles, Cheddar Cheese, Olive Oil

Spices – Garlic powder, Minced Garlic, Chilli Powder, Salt, Pepper,

Let’s get this bad boy started, by heating up a cast iron skillet over the fire until it warms up, then you want to add in a tablespoon of Olive oil. Let that warm up and then toss in a quarter cup of chopped white onions and j along with about a quarter cup of chorizo as well, let it all render.

Once the chorizo has been cooking for a bit, drop in your ground chuck, about a half a pound. As you add that in, throw in your spice mix which consists of: 1 teaspoon each of – Garlic powder, pepper, chili powder and a half a teaspoon of salt. Mix, cover & let it all meld together. You want to get some of your grill smoke into the cooking process.

Next into the boat, my chili slurry, which is a mixture of: 1 tablespoon of ketchup, 1 teaspoon of mustard, 1 tablespoon of minced garlic, and a pinch of the same spices you made above and put into the meats. Add in a tablespoon and half of water, mix all together and add into your meat mixture.

As the chili continues to cook over the fire for about 15-20 minutes, you want to throw on your hot dogs that will cook quickly, so you stay near and keep them turning every 2-3 minutes.

Once your dogs are done throw them into a bun and start loading them up. Chili, pickles, tomatoes, cheddar cheese, sauerkraut, jalapeños, green onions and sour cream! You’re loaded and ready to go.  All that’s left to do is eat and enjoy the game!
