I’ve said it once, I’ll say it a thousand times, “There’s no need to eat poorly on the road in your RV.” And this recipe is a perfect example. With some great ingredients and a hungry appetite, you can, “Chef-It-Up!” With this breakfast chorizo hash!
So, let’s get it on!
Ingredients – chorizo sausage, potatoes, onions, green peppers, tomato, eggs, olive oil, celery
Spices – Sriracha salt, pepper, paprika, rosemary, turmeric, garlic, sour cream,
First, in a warm pan, add in a tablespoon of olive oil and a tablespoon of butter. Let melt down, then drop in about a half cup of chorizo sausage and let cook for a couple of minutes.
Next add in your chopped potatoes. I like to pre-cook these in the microwave for about two minutes, to help along the cooking process.
Once the potatoes and chorizo have cooked for 2 minutes, drop in your veggies. Everything you want in your hash and let those start to cook down with your chorizo.
Next in the pan, your dry ingredients: 1 tablespoon of minced garlic, 1 tsp rosemary, turmeric, paprika, rosemary, pepper and then a 1/2 teaspoon of Sriracha salt. Mix and cover.
The hash should stay on the stove for about 3-5 minutes, then you want to remove from the heat. Right before platting add a tablespoon of sour cream on top of the hash, and under your eggs.
I then take my eggs and cook them in the same pan as the hash, so that I can get some residual flavors directly into my eggs,. I serve on top of the hash and then it’s on like “Donkey Kong!” Eat up and enjoy!
