My motto is simple, “No need to eat poorly on the Road in your RV.” That’s why we’re, “Cheffing-It-Up! With Louisiana Style Dirty Rice”At Stephen C. Foster State Park, there was a burn ban, which means, since I have a charcoal grill, I cannot grill outside using fire. That’s OK, the area was in need of some major rain and you could get a real sense of just how dry it was on any hike.
So, still wanting a great meal, I decided to pay homage to my New Orleans friends, with this “Louisiana Style Dirty Rice.” When I’m RVing, I always bring things that I can cook on a moments notice and this is a great example of how you can be creative and get in a dynamic meal!
The Recipe:
Ingredients – Andouille Sausage, Onions, Green Peppers, Garlic, Salt, Pepper, Olive Oil, White Rice, Chicken Stock, Water, Paprika, Red Pepper Flakes, flour, celery, tomatoes, Paprika, Turmeric, Cardamum, Thyme
First, get your rice going. A cup of rice with 3/4 cup of chicken broth and a half cup of water. Cover and let cook until it’s time to plate.
Next, in a pan, sauté in Olive Oil, your Andouille Sausage (1 link and half chopped up). Once the sausage has cooked and rendered down, remove the meat from the pan and add in a tablespoon of butter and a tablespoon and a half of flour, stir until your rue is a deep chocolate brown.
Once your rue is at the consistency you want, add in a quarter cup of onions, celery, tomatoes and green peppers chopped up, along with your Andouille sausage. To the pan add in a half a cup of chicken broth, a and a tablespoon of minced garlic. Then add in a teaspoon of: Salt, Paprika, Turmeric, Thyme, Cardamum, and red pepper flakes. Pour in just about 3 tablespoons of water, stir and cover, waiting for the sauce to tighten up.
When the rice is finished cooking, remove from the stove and place the rice in a bowl, let stand a couple of minutes to cool, before flipping it upside down on a plate, retaining the bowl mold on the rice.
Carefully ladle your sauce over the rice.
Take it to the table, and eat up and enjoy!
