The start of the RV season has dealt with all of the little headaches you have getting yourself ready to get o the road. It’s crazy, but all a part of the journey.
Now it’s finally time to get out there and do what I love so much and that’s exploring, checking out new locations and cooking on the road. So in this episode, here’s what you have to look forward to:
- A look at “Reed Bingham State Park”
- We’ll talk about what’s coming up on this season for RVJedeye and you!”
- And we’ll do it up right and cook up a Taco Salad on the Grill!
Costs: Three nights – $32.40 a nightThe first stop on the RV journey this year, is at “Reed Bingham State Park,” in Adel Georgia. There are 46 RV and tent sites at t park. Lots to do as well, fishing, boating, swimming, mini-golf, volleyball, cycling and of course hiking.
It all sits on a 375 acre lake. The sites are really easy to get in and out of and all are great sizes. Pretty much, if you have an RV or Travel Trailer, you should be able to get in and out.
The bathhouses are nice, there are washer and dryers available. Cell service was really good and I was able to get a lot of stations on my antenna, that doesn’t have any kind of booster with it.The only thing that was really rough and it had nothing to do with the park itself, is that when I was there, it was cold in the morning… below 30 in the morning to be exact. I can only imagine, once the weather is better, that place being packed!
“WHAT’S COMING UP THIS SEASON?”
You know the nice part of this channel and blog is that I can get feedback from you guys about things YOU might like to see me try or talk about on-air. I try to respond to all of the comments I get and if I miss our one, please shoot me a note to remind me about your question.
So I’m hoping I’ll get some cool ideas of things to try this year from you. Make sure you post a comment here or on the YouTube channel and I’ll take a look and see if I can answer it there or factor it into an episode. Oh and yes, there will be some “Swag” giveaways this year as well!
“COOKING WITH FIRE! GRILLED TACO SALAD”
Ingredients: Boneless Chicken Breast, Chipotle Peppers in Adobo Sauce, Onions, Green Peppers, Bacon grease from two strips of bacon, Canned low sodium black beans, lettuce, tomato, salsa of your choice, shredded cheese of your choice and sour cream
Spices: Sriracha Salt, Garlic Pepper, Adobo Powder, Paprika, Cayenne Pepper
First, marinate three chicken breasts with 1/2 a teaspoon each of the Sriracha Salt, Garlic Pepper, Adobo Powder, Paprika, Cayenne Pepper and a can of the Chipotle Peppers in Adobo Sauce leaving 2-3 peppers out for our black beans. Marinate for a couple of hours or overnight.
Once you’re ready to cook everything up, start the grill and get it nice and hot. Then you want to put your chicken on the grill and cook both sides 10-15 minutes on each side, making sure it’s cooked all of the way through.
While the chicken is on the grill, heat up a pa with your bacon grease and then add in your green peppers, onions, tomatoes, chipotle peppers. Heat up and cook down for about 5-7 minutes, then add in your black beans, stirring and then covering for another 10 minutes before turning off the heat and letting everything meld together.
Once the chicken is done, remove from the grill, shut down the fire and heat up your tortillas on both sides.
Now it’s time to plate everything up and dive into a delicious meal. How you plate it up is up to you, however with chicken, beans, lettuce, tomato, salsa, cheese and sour cream, the combinations are endless!
