“PNW MEET-UP SHAKSHUKA”

CLE ELUM, WA – This is a mini series, if you will exploring my first ever Travato Meet Up. 

In the first video of this mini-series, I arrived at Whispering Pines RV Campground in Cle Elum Washington.  The host site of the meet-up.

RECIPE:

“PNW MEET-UP SHAKSHUKA”

THE RECIPE:

Ingredients – Chorizo, chopped onions, chopped red peppers, Chopped leeks, 1 can of diced tomatoes, Gojujang, garlic, lemon, olive oil, butter, French bread, 2 eggs, Parmesan cheese 

Spices – garlic powder, salt, pepper, cumin, dried oregano, paprika, cayenne pepper 

“MISE EN PLACE” BEFORE HITTING THE ROAD

Step 1 – Chop 1/4 cup of onions and red peppers and one leek stalk.

ON THE ROAD, READY TO COOK

Step 1 – First heat up a skillet and add in 2 tablespoons of olive oil to sweat the vegetables.

Step 2 – Into the skillet, you want to add in a half a pound of Chorizo, a can of diced tomatoes and then a tablespoon of gojujang, and a teaspoon each of: minced garlic, oregano, cumin, cayenne pepper, paprika, garlic powder, salt and pepper.

Step 3 – Once your mixture has cooked down for about 10 minutes, you want to form a well in the skillet and add in three eggs.  To the top of the eggs add in as much Parmesan cheese as you like, probably two tablespoons. Cover and let cook until the eggs are done.

Step 5 – Toast up some bread and plate it all up with a good cup of coffee.
