CASTLE ROCK, WA – There are all sorts of things you can cook out on the road and trust me, I’ve done a ton of them. This time out I was trying to think of something fun to do, that may not be the healthiest of meals, but is definitely satisfying.  So for this “Cheffing-It-Up” episode, we’re going to do an easy recipe for chili fries.  Or as I like to call them, “Crack” chili fries.

“CHILI CRACK FRIES”

THE RECIPE:

Ingredients – ground beef and chorizo, minced garlic,  salt, pepper, paprika, onions, green peppers, crushed tomatoes, 2 russet potatoes, olive oil, Old Bay seasoning, shredded cheese, sour cream, mustard, ketchup, coffee, chili powder, crushed red peppers

“MISE EN PLACE”

Making the air fryer “Crack Fries”:

  • Slice up 2 russet potatoes
  • Soak them in water for about an hour
  • Pat dry, then add in 2 tablespoons of olive oil and Old Bay seasoning
  • Drop in an air fryer at 350 degrees for 15-20 minutes or until golden brown
  • Remove from the air fryer lightly coat with some olive oil and more Old Bay
  • Place in storage container for the road

ON THE ROAD, READY TO COOK

Step 1 – First thing you want to do is heat up a little olive oil and then add in a quarter cup of chopped onions and green peppers and sweat them down until soft. 

Step 2 – Next in the pan you want to add equal parts of ground beef and chorizo about a cup and half combined.  With everything in the pot, add in a half a teaspoon each of salt, pepper and chili powder and cook down.

Step 3 – Once the meat and vegetables have cooked down for awhile, you want to add in 2 tablespoons of minced garlic and a half a can of crushed tomatoes.

Step 4 –  As your chili continues to cook, you want to add in more spices: 1 teaspoon each of chili powder, paprika, a half of teaspoon of salt & pepper, 1 teaspoon of mustard and 2 teaspoons of ketchup. Add in a teaspoon of crushed red pepper and 2 teaspoons of a good coffee. Once you get everything in the pan and mixed you want to simmer on low for 20-30 minutes.

Step 5 -Next, in a skillet add in some olive oil, heat the pan up and then lightly toast your fries, topping off with some more Old Bay.

Step 6 – Time to plate up, take your fries and lay them down, pour over some of your chili and then add in some shredded cheese and sour cream and it’s dinner time!

This is a fun, creative, and delicious meal you can do on the road. A lot of your main work gets done before you hit the road and you could do it all at home and just assemble on the road. No matter how you do it, I think you’ll definitely enjoy this one!
