SNOHOMISH COUNTY, WA – At “Flowing Lake Campground” in Snohomish County it was cold… very cold… snow on the ground cold. So after a long day of hiking and exploring, I really wanted something easy to make for dinner and something that would stick to your bones and keep you warm. So for me this time out, that meant doing an easy recipe for beef stew in my crockpot.

“BEEF STEW”
THE RECIPE:
Ingredients – Beef chuck, minced garlic, salt, pepper, paprika, oregano, thyme, dill, basil, rosemary, onions, mushrooms, baby carrots, small red potatoes, chicken or beef broth, diced tomatoes, flour, water, Soy Sauce, Red wine
“MISE EN PLACE”
Either buy your beef already chopped in cubes, or buy a chuck roast and cut it up into cubes.
ON THE ROAD, READY TO COOK
Step 1 – First thing you want to do is chop up about a teaspoon each of: oregano, sage, dill, thyme, basil and some rosemary. Then you want to chop up one thick slice of onion and about 2-3 mushrooms.
Step 2 – Next you want to start filling up the crockpot. First with about 3/4 pound of chopped beef, 5-6 baby carrots and 3-4 small red potatoes that I did poke holes in. To the pot, add in your onions and mushrooms along with a half a can of diced tomatoes and half can of chicken or beef broth. Drop in a tablespoon and half of minced garlic, 2 teaspoons of soy sauce and 1/4 cup of good red wine. Finish with a teaspoon of salt, pepper and paprika, stir and turn you crockpot on high and let it cook for 2 hours before checking on it.
Step 3 – At the 2-hour mark, stir the pot and cover and cook for another 2 hours After those 2 hours, you’re going to want to make a slurry. That’s about a tablespoon and half of flour and water. Mix and then pour into the crockpot, stir and then turn down to low and cook for another half hour or until the stew thickens.
Step 4 – It is now time to plate up in a bowl. I have some Nan bread and a salad to go along with the stew.

This is the prefect meal for a chilly night. The best part of it all, you can start it in the morning, leave it and do whatever you need to and come back to it at night for dinner and enjoy!
