DARRINGTON, WA –  “There is NO need to eat poorly on the road!” That’s my motto, and I’m sticking to it. Those who already follow up, know that rule and if you’re new to the channel, you’re about to find out about it.

In this episode I’m making a cold noodle soup. I lived in Japan for awhile twice when I was in high school and learned to love and adore the food.  So this is an homage, if you will to one of my favorites when I lived in Nagoya Japan.

“RVJEDEYE COLD UDON SOUP”

THE RECIPE:

Ingredients – buckwheat noodles, water, soy sauce, mirin, sesame oil, seaweed, green onions, sugar, minced garlic, a slice of onion, fresh ginger, thinly sliced beef, shrimp, mushrooms, bonito flakes, miso paste, fish sauce 

“MISE EN PLACE” MADE THE NIGHT BEFORE

Step 1 – Into a pot you want to place: 5 cups of water, 2 tablespoons of miso paste, of mirin and soy sauce. Then at 2 tsp of fish sauce and sesame oil. Follow that up with  2 tsp of minced garlic and 2 tbsp of sugar along with 4 tbsp of bonito flakes.  Finally add in 1 onion slice and one sliced portion of ginger, about 2 tbsp into the pot. Boil the mixture for 5-15 minutes, then cover and let cool down, then place in a container and into the refrigerator overnight.

ON THE ROAD, READY TO COOK

Step 1 – Time to make the “fixins.” In a pan add in 2 tsp of mirin and soy sauce, start to heat up and then add in two pieces of your sliced beef, in this case top round.

Step 2 – Next you want to drop a sleeve of your buckwheat noodles in some salty water, cook for 7 minutes or as the packet details and then pull and shock in an ice bath to cool down until ready to start plating.

Step 3 – To your beef, you want to add in 3-4 sliced mushrooms, 6 cleaned shrimp and 1 tbsp of sugar, with 1 tsp of soy sauce. Cook until shrimp just starts to turn color and then turn off the heat, cover the pan and let stand another 2-3 minutes or until the shrimp is cooked through.

Step 4 – The way you want to plate this is take half of your beef/mushrooms/and shrimp and place them in the bottom of a large bowl. Add your chilled noodles to that bowl and the remaining beef/mushrooms/and shrimp on top. To your bowl you then want to add your chilled broth that you made from the night before and then finally garnish with some seaweed strips and sliced green onions.

Your RVJedeye Chilled Udon Soup is ready to devour!

A little more complicated than normal, but delicious nonetheless and the perfect way to eat well and cool at the end of a very hot day!
