ARLINGTON, WA – When you roll up to your campsite and it’s wet and rainy and you only have a short time before it gets too dark and you want something warm to eat, that’s easy to make, that’s when you turn to something like chili.
The nice part about this recipe, is most of the work is done prior to arriving on site. I’m using my Jetboil MiniMo to cook with, so it’s one pot shopping if you will
AND for this version of chili, I’m doing it vegetarian style, with “Impossible” meat. So, here’s how you can knock out a great meal for a cold night on the road car camping. Hope you like.
“IMPOSSIBLE CHILI”

THE RECIPE:
Ingredients – Impossible Ground Meat, Onions, Red Peppers, Jalapeños, Minced Garlic, Petite Diced Tomatoes, White Corn Tortilla Chips, Shredded Sharp Cheddar Cheese, Olive Oil
Spices – Garlic powder, Minced Garlic, Salt, Pepper, Chili Powder, Dried Red Peppers, 1-Ketchup packet, Coffee
Step 1 – Into the Jetboil MiniMo, add in two teaspoons of olive oil, heat up and then add in a half a pound of “Impossible” meat with a half a teaspoon of salt, pepper and garlic powder.
Step 2 – Once the meat has browned a bit, you want to add in a teaspoon of minced garlic and a can of petite diced tomatoes. You’ll also want to add a half a teaspoon each of salt & pepper and a full teaspoon of chili powder.
Step 3 – Once your tomatoes and meat have cooked about 2 minutes, you’ll then add in your chopped onions, red peppers and jalapeño and I add in a half a teaspoon more of minced garlic.
Step 4 – Time now to turn heat down and cover for another 5-10 minutes, before turning the heat all of the way off and letting it steep, covered for another 2-3 minutes before serving.
Step 5 – Finally, when you’re ready to plate up, throw some white corn tortilla chips in a bowl, add some shredded sharp cheddar cheese on top of the chips then add the chili on top and finish off with some more cheddar cheese.

And that’s that! “Impossible” chili, done in the Jetboil MiniMo. It took about 20-25 minutes to put it all together and get it ready. A great meal to warm up the bones on a cold and rainy night car camping!
