What do you do when you’re craving fried rice on the road? You grill up some shrimp and do it RVJedeye Style! No need to eat poorly on the road and here is a perfect example of how you do it!
Recipe:
Ingredients – Shrimp, Green Onions, Jalapeños, White Rice, Baby Carrots, Fish sauce, Soy Sauce, Flour, Water, Canola oil
Spices – Minced Garlic, Brown Sugar, Allspice, Ground Ginger,
You want to get your marinade for your shrimp ready first. Take two tablespoons of brown sugar, a tablespoon of minced garlic, a teaspoon each of allspice and ground ginger along with a tablespoon of fish sauce and soy sauce and cook down until blended.
Once your mixtures is dissolved and warm, add in a slurry of equal parts of water and flour to thicken, then let stand and cool.
Take your marinade and pour over your shrimp and let them marinate for about a half hour. After, skewer your shrimp with wooden skewers soaked in water. You’ll then get them onto a hot grill, turning them every 2 minutes or so until they are cooked through. As you cook your shrimp, brush on some of your extra marinade to coat. Then remove from the grill and rest.
Next, you want to take 4-5 baby carrots and finely chop them, along with a whole green onion stalk, some jalapeños to taste.
In a pan, add in one tablespoon of canola oil or any oil you like. Heat up and then add in your carrots, onions, jalapeños and a teaspoon of minced garlic. Cook down for about a minute.
Once you’ve cooked your veggies down, add in one egg and scramble it with your veggies,
To your cooked down veggies, add in two cups of cold white rice. I like to make it the day before and leave it in the refrigerator. To that, you want to add two tablespoons of soy sauce, two to three shrimp and then you want to quickly coat the rice and mix everything up. This should last 2-3 minutes and then you’re ready to plate up and enjoy!
