When you’re out and about and doing things like hiking…Or exploring caves…You sometimes want just a light, fun meal after a long hard day. So in this episode, I’m sharing one of my favorites, a “Grilled Spicy Shrimp Salad”The Recipe: “Grilled Spicy Shrimp Salad”

Ingredients – Shrimp, Portabella Mushroom, Corn in the husk, Tomatoes, Onions, Green Pepper, Asparagus, Avocado, Sour Cream, Bacon Buttermilk Ranch Dressing, Olive Oil, Crystals Hot Sauce

Spices – Salt, Pepper, Garlic Powder, Old Bay Hot, Paprika, Cayenne Pepper, French Thyme, Oregano,

First start by building your rub paste. Combine a tablespoon of garlic powder, teaspoon of paprika – Old Bay – , French thyme – oregano and a half teaspoon of cayenne pepper and salt & pepper. To the dry, add in a tablespoon of olive oil and two teaspoons of Crystals Hot Sauce. Mix together and coat the vegetables and shrimp before putting all of them on the grill.

Now when put everything on the grill, you put the corn in its husk on the grill and cook that the longest, which is about 5-10 minutes, turning it to cook. Once everything has cooked, you pull the corn, take it out of the husk, shave it, put it in a bowl and dust with Old Bay.

For the dressing, take a quarter cup of Bacon Ranch, add in a tablespoon of sour cream and a teaspoon of Old Bay, mix and serve.

You can plate the salad however you’d like, I do it with loose lettuce, vegetables laid down on the lettuce, add the corn then the shrimp and finish with the dressing and then enjoy!
