In this episode, we’re jumping over the border to explore a new State Park which is always a blast. Getting out on the road is fun and my goal is to try to hit up new places every time I go out, so the trend continues in this episode with some fun twists. What are those twists? Here’s what I’ve got for you:

On this trip:
This New-2-Me-State Park, is located in Niceville Florida. Sounds like a place Super Nice Superman/woman would be from.
The park has a little bit of everything: RV spots, Tent Camping, a Boat Ramp, Hiking, and more. There’s a lot of activities to do when you’re parked for a while and I think you’ll enjoy them all.
The RV spots are nice and big, easy to move your rig in and out easily. The park in general is well kept and very clean. The bathhouse is nice and roomy, also very clean. They have washer and dryers if you need them and a donation library to share books and DVD.
Cell service is solid and even with the trees all around most sites, which makes them feel really private, you can get good over the air- television.
– Drama at the RV Site Right Next to Mine…
The Rvlifestyle has been really good to me so far. Ever since I started my journey I’ve met a lot of good people on the road and when someone is need, others seem to step up and help. That was the case early one morning as I got up ready to go out on my daily hike. The Sheriff’s office and EMS were at the site next to mine helping out a couple. It was a little crazy as the ambulance had to take the husband away to check him out. The wife was a little frazzled, I helped her out a bit and in the end everyone turned out to be OK.
Again the nice part about the RV Community is that it feels like when things happen, others around help out whether it’s equipment issues, health issues, or anything else. I’m glad I’m a part of it all and hope to keep paying it forward.
– Cheffing it Up: “Cowboy Beef & Bean Dip”…
You always need a great little something-something to nosh on when you’re watching football and with a little work, you can take this recipe and make the perfect snack.
Ingredients: Small top round roast, 8 OZ can of Black and 8 OZ can of Red Beans, Onions, Red Peppers, Ketchup, Crystal’s hot sauce, Olive Oil, Leeks
Spices: Garlic Powder, Salt, Pepper, Paprika, Rosemary, Thyme, Brown Sugar
Day one… First, a dry rub for the top round: Mix a teaspoon each of, Garlic Powder, Dry Basil, Paprika, Rosemary, Thyme, and Salt & Pepper
Once all of the dry ingredients are all mixed together, rub a little olive oil on the meat and then massage in your dry rub. You’re going to want to let your rub sit on the meat for at least 2 hours longer if you have time.
You need to get your charcoal grill up and going and then cook your top round for about 40 minutes – an hour. You want to cook it to medium rare. Once the meat has rested, you cube it up and let it sit.
While the meat is cooling off, you start a pan with a tablespoon of butter and Olive Oil. Once the butter starts to melt, add in the onions, peppers, Leeks and sweat them all down.
When the vegetables are starting to get soft, you want to add in garlic, paprika, Rosemary, two tablespoons of brown sugar, a quarter cup of ketchup, tablespoon of Crystal’s hot sauce (or your favorite). Mix and cook down for a couple of minutes before adding in both cans of beans. Stir and cook for another couple of minutes, before adding in your beef. Mix, cover and cook for 20 minutes.
Once your beans have cooked, you want to take them off of the stove and put them into a container to sit in the refrigerator overnight until game time.
Day two… Time to serve it all up. Take your beans out of the fridge and put them in a bowl. Choose your favorite dipping vessel and boom… you’ve got “Cowboy Beans.” Enjoy and have fun watching the game!
