In this episode, we’re jumping over the border to explore a new State Park which is always a blast. Getting out on the road is fun and my goal is to try to hit up new places every time I go out, so the trend continues in this episode with some fun twists. What are those twists? Here’s what I’ve got for you:

–           A Look at Seminole State Park…

–           A New Camera & Gear for the Channel…

–           Cheffing it Up: “Argentinian Rubbed Steak with Chimichurri Sauce”…

On this trip:

–           “Seminole State Park”…

Seminole State Park, is located in Donaldsonville Georgia, or as I like to say, “Geeyorgia.” It’s my homage to the State which has provided some of the best RVing spots since I’ve started the journey.

This park has it all: RV spots, Tent Camping, Cabins, Boat Ramps, Hiking, Mini Golf, and A Sandy Beach to swim in. It has a little bit of everything for everyone.

The RV spots are almost all pull-through and they have two tiers of spots, ones right near the water, which I totally recommend and then lots of great spots steps away from the water and some tucked away in the back of the park in between the trees. The park in general is well kept and very clean. The bathhouse is nice and roomy, also very clean and they have washer and dryers if you need them.

Cell service is great, but you really want to turn off the electronics in a place like this and enjoy the water and hiking. This is a place you could easily make a regular stop on your RVing plans.

–           Camera Gear, the Good, the Bad and the Ugly…

Over my time RVing & this channel, I’ve been slowly trying to up my game when it comes to gear. In an effort to do so, I added three pieces this time, two of which I’ll pretty much use a lot moving forward. The new mini tripod and light were both solid purchase and will help a lot moving forward, so that’s the good.

However the camera I picked up… well that didn’t turn out as good as I had hoped. I bought the camera, because of the flip-up screen and extras, which included a wide angle lens. But the audio quality is not very good and it’s past the return date, so I’m stuck with a camera that I may use periodically if the conditions are ideal and I can play with the audio in post.

Bottom line, two of the new gear purchases are solid, the big one, not so good so the hunt continues for a new camera. But heck 2 out 3 in baseball is a great average, so I’m going to think about baseball and look at the positive!

–           Cheffing it Up: “Argentinian Rubbed Steak with Chimichurri Sauce”…

I love a good steak and rub and when you throw on a Chimichurri sauce, sign me up. It’s an Argentinian treat I hope you’ll enjoy. Here’s my version of it all!

“Argentinian Rubbed Steak with Chimichurri Sauce”

Ingredients: Ribeye Steak, Potatoes, Onions, Zucchini, Mushrooms, Parsley, Basil, Thyme, Soy Sauce, Apple Cider Vinegar, Sour Cream, Olive Oil

Spices: Minced Garlic, Salt, Pepper, Paprika, Rosemary, Basil, Garlic Powder, Oregano

First, let’s create the dry rub for the steak: Mix a teaspoon each of, Garlic Powder, Oregano, Dry Basil, Paprika, Rosemary, and Salt & Pepper

Once you have the mixture all together, rub a little olive oil on the meat and then massage in your dry rub. Then let your meat marinate for at least 2 hours longer if you have time.

Next, you want to mix up your Chimichurri sauce so it too has time to meld together. You want to chop up the parsley, basil, and Thyme. Then you want to add in 2 teaspoons of minced garlic and dried oregano. Add two tablespoons of olive oil, a teaspoon of both Soy Sauce & Apple Cider Vinegar. Mix everything up, set aside and let it marry together.

Time to fire up your charcoal grill and get it going. Once it’ really hot, you want to get your steak out of the fridge, let it come to room temperature and then throw it on the grill, it will cook fast and really you want it around rare to medium rare only.

While the steak is on the grill, take the potatoes and “nuke em,” aka microwave them for about 2-3 minutes or until soft, take off, let cool and slice up. Then you want to chop up onions, zucchini and mushrooms. You want to fire up a pan and get them going with some butter. About 2-3 minutes in as everything is sweating down, add your potatoes back in and spices: parsley, thyme, garlic powder, paprika and salt & pepper. Mix all together, leave on heat for about 2-3 minutes then cover and turn off heat.

Time now to take the steak off of the grill. Let it rest for a couple of minutes then you want to slice your steak and fan out for presentation. Take your Chimichurri sauce and lay it out over the meat. Take your vegetables and lay them out on the plate and add in a dollop of sour cream

Bring everything to the table and enjoy!
