VANTAGE, WA – Every now and then, I like to do an homage if you will to great food from different places and times in my life. This week, we’re “Cheffing-It-Up” with a nod towards California and one of my all time favorite burger places, “In-N-Out” with an “In-N-Out” street taco… animal style

“IN-N-OUT STREET TACO ANIMAL STYLE”
THE RECIPE:
Ingredients – ground beef, flour tortilla, tomatoes, onions, cheddar cheese, lettuce, sweet relish, mayonnaise, ketchup, yellow mustard, rice wine vinegar, garlic powder, salt, pepper, olive oil.
“MISE EN PLACE”
- Shred your lettuce and dice up your tomatoes and set aside
- Chop two slices of onions
ON THE ROAD, READY TO COOK
Step 1 – In a small bowl mix together: 3 tablespoons of Mayo, a teaspoon each of: ketchup, yellow mustard and sweet relish. Then add in a half a teaspoon of garlic powder and salt & pepper, along with a teaspoon of rice wine vinegar. Still and set aside.
Step 2 – Next mix a half teaspoon of of salt, pepper and garlic powder with a little more than a half pound of ground beef and form two balls.
Step 3 – In a pan, heat up some olive oil until the skillet is hot and sauté your onions until soft and remove from heat
Step 4 – Time to take the ground beef and spread it out over the flour tortillas and then place in pan, ground beef side down first for 2-3 minutes then flip and add in half of your onions and just enough cheese to cover your taco, cover and melt.
Step 5 – Once your tacos are cooked, you want to pull them and top with your “In-N-Out” sauce, lettuce, and tomatoes, fold and plate up to serve.

A true homage to some of the best burgers in the world that turned into a great taco version!
