SEATTLE, WA – It’s that time of the year, where everyone is getting ready for some form of “Thanksgiving.”  To me at the core of every good Thanksgiving holiday are: Family & Friends, Football, and great food!  I cannot tell you how many times over the years I can remember sitting around stuffing myself and laughing out loud at the dinner table as folks share some great stories.

With that all in mind, I thought what I would do this year is share some meals that you may want to try if you’re out in your RV or you can take some of these and do them at home as well.

Now because I’ve been RVing a long time… since 2016, there are a lot of different recipes from this channel, so for this year, I’m doing what I call the “2 x 2” suggestion method.

I’m going offer up 2 recipe ideas per Thanksgiving day meal.  Something for breakfast, lunch… appetizers… main courses and desserts.  So, let’s kick this off and have some fun.

It’s Thanksgiving morning and you need breakfast.  I’ve got two options to offer up:

BREAKFAST

Shakshuka… At a Christmas Tree Farm, early back in 2024 I made one of my favorite dishes for breakfast that I think would be a good way to kick off the day, Shakshuka!

Gnocchi Hash… Also a fun possible breakfast… Gnocchi Hash.  This I made staying at Potowatami Casino in Wisconsing, perfect on a wet morning.

LUNCH

Middle of the day… feeling a little hungry for some lunch?  How about these meals? Starting off with easy peasy Fajitas?

Or you could head back with me to Georgia and Seminole State Park for some Chili Dogs.

PRE-DINNER

With folks arriving, maybe even watching some of the football on Thanksgiving, you may want a little “Nosh” if you will. So my top 2 apps for this Thanksgiving are:

Crab Cakes… Did those earlier this year, 2024 at Wenberg County Park and they were fantastic and I feel like that’s a good Ap for a meal

The other option could be Aps for Dinner… I made this meal back in Wisconsin… Kholer Andre State park, where I literally made appetizers for dinner.

DINNER

So for main dishes, there are so many to choose from and for this I’m going to break the rule of 2 so far and do: 1 Pasta dish… 1 Seafood dish… 1 Pork dish… 1 meat dish and 1 poultry dish…

First… For Pasta… 2020… Potawatomi State Park in Wisconsin… Hmmm loved this… Grilled Lasagna.

Next… Seafood… Let’s head back to Florida, Manatee Springs State Park, about 5 years ago and Cioppino.

I’ve done pork many times on the channel, but I think one of my favorites came in 2021 at Calumet county park in Wisconsin making my take on ribs.

I know most Thanksgiving’s are about turkey, but some folks like to eat something a little different so for the meat category here… we go back to 2019… Back to Florida and Stephen Foster Folk Culture State Park and bust out some Campfire Meatloaf.

And finally… thinking about turkey and poultry in general… again, I’ve done a lot over the years… and for this, I’m turning back the clock 4 years ago and some Grilled Wings!  You don’t need to cook a whole bird, to enjoy a poultry meal!

DESSERT

Back to the 2 by 2 theme and you can’t finish a meal without a dessert, ESPECIALLY on Thanksgiving and in this case I’ve got 2.  Not your typical dishes either for the holiday. One from the past and one from the present.

The first we’re heading back in the “way back machine”… Season 4… Episode 7… At the beach for “Red Velvet Waffles”

And then let’s wrap it up with something new and something very easy to do from Season 9… Episode 29… Schafer State Park in Washington… you got 1:30? You’ve got dessert! “Chocolate Strawberry Coconut” microwave cake!
