Good things come to those who wait… right?  Well when I first got into RVing, everyone in Florida told me about this cool park in the Western part of the state called, “Topsail Hill Preserve.” 

For years I tried to get a reservation and I just wasn’t able to line up the dates… that is until THIS year. I was finally able to carve out the right time to get a spot and after being there and seeing the park in general, I get why there is such a long wait to get in.

In this episode, you’ll get a chance to do a lot with me, including:

“TOPSAIL HILL PRESERVE STATE PARK”

Costs: Three nights – $48.85 a night

Absolutely beautiful… Stunning… Pick a word and that’s how you probably can sum up “Topsail Hill Preserve State Park.” I’ve mentioned, multiple times how difficult it can be to get into this State Park and after spending some time there I get it.

First and foremost, the sites are immaculate and from what I can tell, most had full hook-ups. They were easy to get in and out of and there are trees all around you, so you get a sense of privacy as well.

The bathhouses are nice and clean and well maintained. The sites even have cable hook-ups. There is a laundry area for those stying longer and needed a place to wash clothes. And the also have a couple of little stores on property.

The roads are paved, so a lot of people bring and ride their bikes all over and especially towards the beach area. But if you didn’t want to hike down or use your bike, there is a tram service from the camping areas to the beach.

Oh and the beach… gorgeous!  One of the best beaches I’ve seen in Florida. Beautiful white sandy beaches that you can play in for hours.  The weather was a little rough when I was there, however you still got a great sense of how amazing the water is. 

By far, this is one of the best State Parks I’ve hit in all of my RVing life!

“HIKING BOOTS ANYONE?”

I’m a hiker whenever I can on the road. For the last couple of years, I’ve had some Ozark Trail hiking boots which I’ve loved. However, they got pretty thrashed the last time I was out at “Reed Bingham State Park.” So I needed some replacement boots.I decided to try out some “High Sierra” kicks from “Burlington Coat Factory.” They were inexpensive and in the store felt pretty good, so I picked them up and took them out for a test drive.And while I’ll probably keep the shoes in the rig as back-ups, these are not the shoes I’m going to go with full-time. I need more support in my arches and feet in general. These, despite hiking in them over three days, are still still and don’t fit as well on my feet as I had hoped. 

Still they’re not totally bad and I will keep them in the rig moving forward, alas my search for a better pair of hiking boots continues!

“CHICAGO STEAKHOUSE MEAL”

Ingredients: Ribeye Steak, Russet Potato, Asparagus, Olive Oil, Sour Cream

Spices: Salt, Pepper, Garlic Powder, Old Bay

First, poke several holes into your washed and cleaned potato. Rub on some Olive Oil and Old Bay, place on the grill and let it start cooking.,

While the potato is cooking on the grill, mix up a teaspoon each of: Salt, Pepper, Garlic Powder. Rub you Ribeye with Olive Oil on both sides and then put your rub on the steak and let it set for 10-15 minutes before placing it on the grill, watching it carefully not to overcook.

As the potato and steak are finishing up, rub Olive Oil and Old Bay onto your asparagus. When you remove the steak to let it rest and are close to taking off the potato, close your dampers on your grill and place the asparagus on it. Close up the grill and turn asparagus about every 2-3 minutes to make sure again you do not overcook it.

Once your steak has rested, the potato is off of the grill, slice it and add some sour cream. Remove the asparagus. Plate it all up and enjoy your “Chicago Style Steakhouse” meal!
