Think back for a moment… to a show you grew up with as a kid. Now think about any meal they ate on the show and what memories it brought you.Well for me, I loved the “Brady Bunch.” And if you loved the “Brady Bunch” like I did, you know probably can guess the meal I decided to “homage,” this week.Yep, it’s the iconic, “Pork Chops & Apple Sauce!”  This was probably the most recognizable meal they ever made on the show, so for this episode, I’m doing it with a twist… cooking it on the grill, outside, RVing

“A VERY BRADY MEAL!”

Ingredients: Two bone in pork chops, 3-4 peeled apples sliced up, asparagus, minced garlic, olive oil,  butter, vanilla extract

Spices: Thyme, Basil, Cardamom, Pepper, Lemon Rosemary Salt, Cinnamon, Sugar

First, make your dry rub with: 1 teaspoon of dried Thyme, Basil, Cardamom, and Pepper. Add in a half teaspoon of the Lemon Rosemary Salt. Shake and put the chops and dry spices in a bag, along with a tablespoon of minced garlic and olive oil. Let stand and marinate for a couple of hours or overnight.

In a cast iron pan on the stove, heat up a tablespoon of butter. Add in the apples, 1 tablespoon of cinnamon, two teaspoons of sugar… white or brown. Start to cook down, then place on the grill outside, closing the lid to infuse smoke.

After about 2-3 minutes, add in about a 1/4 cup of water and continue cooking until the apples have cooked almost all of the way down, probably another 3-5 minutes. Remove and place on the stove to cool covered.

Once the apples are off of the fire, take your pork chops and get them on the grill about 2-3 minutes on each side, careful not to burn.

Once the chops are done, remove from the grill, take the asparagus and rub them down with olive oil. Toss them in the lemon rosemary salt with pepper and place on the grill. That’s when you can shut down the fire and cover the asparagus, turning them to get grill marks before plating.

As soon as the asparagus is ready, take the chops and apple sauce and add them to the plate and boom there you have it, “Pork Chops & Apple Sauce for Dinner!” It’s a meal I think even Alice would be proud of!
