Hitting the road and continuing the dream… Have not returned to the same spot in 2 ½ years of RVing. It’s not that I haven’t found some spots I’d like to go back to, but I just feel why not explore as much as you can, so that’s what I’ve been doing.

“Ginnie Springs”

250 wooded acres all along the Santa Fe River and boom, you’ve got “Ginnie Springs.” The park is located just outside of Gainesville Florida in High Springs. This is what I call a “Party Park.” It is huge and designed to have a ton of folks spend time there. Whether it’s RVing, tent camping or day use, this is NOT a quiet relaxing park.

There are a lot of activities, from the springs to sand volleyball to snorkeling and diving. You’ve got spots all over the park for groups to gather and when I was there that seem to be the norm. Small groups of folks camping, having a good time and also making a lot of noise.

Cell service was good. A lot of bathhouses and dump sites to get rid of your trash and for the most part the RV sites were easy to get in and out of.

“Changing Up the Hiking Routine”

Normally when I get to a location, one of the first things I do is hit the hiking trails and take you with me. This time I decided to do something a little different. I waited until early in the morning and got up and did my first tour of the park and too you all with me.

It was a beautiful hike, chilly, but at the same time, one of the quietest times of trip, so for that, I loved it. The park itself, doesn’t have a ton of great hiking in the woods that I found. Most of the hiking was between springs on dirt roads getting to the water.

If you’re looking to take a relaxing hike doing it in the morning here, is probably your best bet.

“A Rustic Loaf on the Campfire”

Doing something fun and unique on the road. Making a rustic bread loaf and creating a bread board for dinner!

The Recipe:

Ingredients – All Purpose Flour, Olive Oil, Yeast

Spices – Salt, Pepper, Garlic Powder, Sugar, Basil, French Thyme, Oregano,

Start by combining a tablespoon of yeast with a teaspoon of sugar and ¼ cup of warm water. Mix and let proof for about 5 minutes.

Next mix together two cups of flour and spices. A tablespoon of garlic powder, French thyme, basil, oregano and salt & pepper.

To the dry, add in your yeast mixture, along with a teaspoon of olive oil and ¾ of a cup of warm water to a cup. You want just enough water to mix the dough and incorporate everything. Mix the dough in the bowl until it pulls away from the edges and then dump out on a floured cutting board kneading into a tight ball.

Once the dough is in a ball, place it into an oiled bowl, cover with a warm cloth and let rise for 2 hours. After the two hours, punch it down and let it rise one more time for about 45 minutes.

Just before you’re set to check on you dough, heat a cast iron frying pan. Add in some olive oil, rubbing it all over and take it off the heat.

After the second rise, take the dough, put it in the pan. Score it on top and coat with olive oil and let the dough rise one more time for about 20 minutes or so.

Once the dough is done rising, take the pan out to a campfire and place it right on the coals, cover and cook for 20-30 minutes before checking. If it needs more time, keep it on the fire. You’re looking for a golden brown on top before taking the loaf out and out of the pan onto a board to cool.

You can plate the meal as soon as the bread is off of the fire. For this episode, I had roast beef, sliced hard boiled eggs, ham, black peppered turkey, Havarti – Swiss – and Provolone cheese. Add in some champagne and herb butter and enjoy!
