There is nothing better than getting back out on the road and exploring. For me, I really love it when I can hit a State Park or better yet, next to a beach. So start off the 2018 season, I wasn’t able to hit the beach, but I did get to check out a new Florida State Park.

So on this trip menu for you I’ve got:

–           Lake Griffin State Park…

–           Knocking off the Rust…

–           Cheffing it Up: “Coffee Spiced Rubbed Ribeye”…

On this trip:

–           “Lake Griffin State Park”

Lake Griffin State Park, is just off the beaten path in Fruitland Park, Florida. It’s a little out of the way, about an hour North of Orlando and not a bad little place to head off to. The park itself has 40 spots to park and a mixture of site sizes, so something for everyone. There is a boat ramp and a place to rent kayaks if you want to hit the water. There is a small park, with some playground toys for the kids and a pavilion to have events at the park. They do have some hiking trails, not a lot so you’ll have to loop back on a couple of them if you are there more than 2 days and like to hike daily. The bathhouse is clean, a little tight in the shower areas, but a good option. Cell service is good, had a lot of trouble getting over the air signal for my television, but that could be because my site was heavily covered with trees, which was very nice. Now the one downside to the park, is it’s tucked away off of highway 441/27 and you CAN hear the road noise. At night, I just busted out a sound machine to drown out the noise and slept like a baby. At about $26.50 a night, it’s a good spot for a couple of days.

–           Knocking off the Rust…

This was the first trip of the season for me, which is a little odd since my base is in Florida and let’s face it, for the most part the weather is pretty good here year round. But as I wrapped up the 2017 RV season with a really nice trip to Cotton Hill Campground in Georgia, I also made the decision to downsize in my primary residence and that meant spending a lot of time moving.

Once I was able to get things relatively set up at home, it was time to turn my attention to getting ready for the road. That meant doing a couple of projects on the RV like replacing a battery. Checking on the tires for the rig and getting one of those replaced. And getting a new filter for my RV.

Small projects done, it was time to hit the road and like a bike, it took a little bit to remember some things, but then it came back like I hadn’t forgotten a thing. I don’t fulltime yet, but am committed to get out as much as I can, twice a month if I can and or bigger trips whenever possible. When I DO get to go on long trips, it feels so good and I can easily see why so many do it fulltime. I salute you my RV friends!

–           Cheffing it Up: “Coffee Spiced Rubbed Ribeye”…

I love cooking and love cooking in my RV. No need to eat poorly, that’s what I always say! So in this episode, time to share an easy recipe I think you’ll enjoy. If you try it, let me know how it turns out!

“Coffee Spiced Rubbed Ribeye”What you’ll need for this meal: Ribeye steak, Asparagus, Potatoes, Onions, Mushrooms, Olive Oil, Garlic powder, salt, pepper, dried basil, and Good ground Coffee, Bacon grease, a small grill, and pan on stove

First build your rub:

2 tablespoons of good coffee, 3 teaspoons of garlic powder, 2 teaspoons of salt, 1 teaspoon of pepper and dried basil. Mix all very well.

Next you want to take your ribeye and coat each side with about 1 teaspoon of olive oil, then massage the dry rub on and let rest. Leave some of your rub for the asparagus.

Once your grill is hot, place your ribeye on the grill and start your pan on your stove. Not in my case I had already cooked two pieces of bacon in the morning and saved the grease for dinner. If you haven’t cooked your bacon do that now, or you can omit and just use some Olive Oil.

As the meat is cooking and the bacon fat is warming up in a pan, drizzle some Olive Oil on the asparagus and pour some left over dry rub on the asparagus.

As the pan with the bacon fat is coming up to temp, thinly slice your potatoes, onions, and mushrooms. As soon as the pan is hot, place items in pan, adding a little salt and pepper and dried basil. Cover and cook until potatoes are soft. You can deglaze the pan with a little chicken stock, or white wine to add flavor as well.

As the steak finishes up on the grill, remove and allow to rest. Place your asparagus on the grill and start to close up the vents. That should be enough heat to cook your Asparagus down.

Once your steak has rested for about 5 -7 minutes and you remover the asparagus from the grill, plate up the potatoes and mushrooms, steak and asparagus and enjoy your meal!
